Elle Peyarre’s Basil Bean Stew Recipe

The long precious process to make France’s beloved Soupe au Pistou requires strong patience, but sometimes I need it ready within 5-minutes. Forgive me people of France, this is my super quick nuke-it-in-the-microwave version. It cannot compare to the authentic Soupe au Pistou but it is absolutely fulfilling if you’re looking for a quick meal-for-one at the end of a work day.

Ingredients:

1 can of Cannellini beans, tube of tomato paste (I recommend Bomba), fresh Genovese Basil sauce, Shaved Parmesan cheese, black pepper

Directions:

Drain Cannellini beans from the can. Place beans in a microwaveable dish and warm it in the microwave for 2 minutes. Take out and stir in 2 spoonfuls of Genovese Basil sauce, and a small squirt of tomato paste, add some Parmesan cheese, and a sprinkle of black pepper. Serve immediately (optional: with a nice slice of French bread).
