Piquillo Peppers with Goat Cheese

I find my jar of Piquillo peppers at Cost Plus World Market. Do not use the jar of fire-roasted peppers at the neighborhood grocery store to make this, it will not taste the same. Piquillo peppers have a distinct sweet taste.

Ingredients: Piquillo peppers, herbed goat cheese, less than half an onion sliced thinly

Instructions: Stuff the Piquillo peppers with herbed goat cheese. Cut onion into thin slices. Heat a bit of Canola oil and carefully fry the onion slices until it’s a bit golden. Remove the slices and let the oil on it drain on a paper towel or two. Pat the fried onion slices with the paper towel to remove any excess oil and place the fried onion on top of the stuffed peppers and serve. Cool buttery goodness.
