The fragrant Berbere ingredient adds tang, spice, and sweetness to a dish.
Ingredients
– tablespoon of minced fresh ginger
– sprinkling of Berbere spice
– sprinkling of Madras curry powder
– sprinkling of chopped cilantro
– sprinkling of garlic powder
– salt & black pepper (freshly-ground)
– 2 thin-cut Swai fish fillets
– a drizzle of extra-virgin olive oil
– knob of butter
Directions
Line a small baking pan with aluminum foil for easier clean up and drizzle with oil.
Put frozen Swai fish fillets in pan. Add salt & pepper to taste. Add sprinkling of garlic powder and cilantro. Add Berbere spice to cover fish and Madras curry powder. Top with butter.
If Swai fish is frozen, heat oven to 450 degrees and bake for 19 minutes. Enjoy.
